- 250g blueberries
- 4 chicken breasts (125 g)
- 50 g chopped shallots
- 50 g chopped red pepper
- 2 cloves garlic
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon dried basil
- 2 tablespoons fresh basil
- 2 teaspoons sugar
- 1/4 teaspoons coriander
- 1/2 teaspoon salt

- Put the chicken, garlic, 1 tablespoon vinegar, oil and dried basil in a bowl
- Cover with plastic wrap, and refrigerate for 1 hour whilst the marinade works its magic
- Add 1 tablespoon vinegar, 1½ punnets of blueberries, the shallots, red pepper, fresh basil, sugar, coriander and salt to a separate bowl and mix well
- Remove chicken from the refrigerator and allow it to return to room temperature
- Season chicken breasts with salt and place in a sizzling grill pan
- Cook for approximately 5 minutes each side
- Serve with the blueberry blast relish and remaining blueberries
- Blueberry heaven!
